Hot Dog Burritos

I’m sure we all go through times where we don’t have a meal plan, and it’s slim pickings in the fridge. When this happens, and you live far from stores, restaurants, fast food places, and no one delivers to your house, it’s time to get creative. It happened to me recently, and I was pleased with what I threw together.

If you know me, you know I don’t eat hot dogs. I’m a pescatarian which means I eat much like a vegetarian except that I eat fish and other seafood. I have found these plant-based hot dogs that are pretty good. I might as well give them a little plug here… LightLife Smart Dogs.

So, back to my creative recipe. I had the smart dogs but no buns. I did have some flour burrito tortillas and thought that might be
interesting.

I cooked my smart dog, heated a tortilla, and put everything I like when eating a hot dog on a bun into the tortilla. It was a hot dog, mustard, sweet pickle relish, and chopped onions. I rolled it up like a burrito, and there it was… dinner. It was excellent! I would highly recommend trying this. Of course, you don’t have to use plant-based hot dogs; I’m sure meat-based will be just as good.
